May all your Christmases be white ❄

The title makes it clear. The Christmas time is here!
And as I love a song with that title, I thought that would be perfect.
So today was our last day of school. Class Christmas parties and stuff. Kind of weird knowing that it's our last Christmas together! So of course, what else would I bring if it wasn't cupcakes. This year I thought I'd just color my frosting green and sprinkle it and it would look like a christmas tree :)  I also wanted to do a star on the top of each cupcake's frosting, but I finally didn't find the time to run to the store and get stars  :(
So that's how my chocolate cupcakes with green "american" buttercream frosting looked like/




Ugh, you can see that because I had to somehow transport over 30 cupcakes to school some of the Christmas trees lost their tops! And obviously, all of them are missing the stars :(

So anyway, as I, the worst blogger ever, finally got around to posting something,

     I WANT TO WISH YOU A DELICIOUSLY AMAZING CHRISTMAS!! 

I love all of you that actually read my posts that I do so rarely recently... 
So merry Christmas and I'll wish you that and post a song. ('Cause I absolutely love Christmas songs!)

Long forgotten

I came across many piuctures of my previous cupcakes that I made soo long ago. Of course I took pictures, I always do, but then I don't post them... don't ask me why, I have no idea! So there you go with the pics!








Those I've found on my laptop, I'm sure there's more of those. if you're curious what is a particular one, ask! I guess the first picture, which shows my I guess prettiest cupcakes ever - worms and spiders were for Pixie's  scary birthday/halloween party :) That I remember! Haha it was fun to do those.

Baking Baby

I GOT THE JOB. 
I'm sorry, I was soo excited and I tweeted that I got it but I haven't actually let you know here. Buut I GOT IT yaaay!
So the call woke me up on Wednesday (it was like 10-11 am). They told me, they had to pick just one person and they've chosen me. I mean between me and Pixie. I was super excited that I got the job, though it kind of got me down that I won't be working with P as I was really looking forward to it. But if it had to be just one person, I'm glad I got it (sorry, Pix <3). So I was wide awake in a moment and as I hung up I ran out of my room and started shouting "I got the joooob! I gooot the joooob!" and doing crazy winner dance.
Hahah yeah, so they told me to be there today, so thursday. Today was my again kind of trial day as I was there just for 4h (which was exhausting, but OK, I'm not complaining!).
So I helped today to bake brownies, cut the cake, I kneaded dough, used cashier machine and... brewed coffee. The last was the hardest for me, I guess. Which cup, which button, foaming milk and so on... But I'll get to the point where it would be nothing for me! :) I hope?
Anyways it was a really good day, I guess. Maybe presence of Pixie was making that happen as she was there for I believe most of the time I've spent there, eating brownies, drinking coffee, reading a magazine and being a lovely friend :)
So thank you all if you had crossed your fingers for me, 'cause this is seriously great. I can't imagine a better first job.
Oh, and if you want to pay a visit and try one of the amazing bakings there are in Qki, it is really near the Natolin metro station.
And let me know if you want reviews on what can you get there. Yes, I AM going to try them all. And I can tell you all :)

Is this for real?

As you may have read on my other blog I MAY BE GETTING A JOB AT BAKERY!
How super exciting is that?! 
Let's start at the beginning. I was out with Pixie and we decided to go to this little bakery not far from us that we've never actually been to, but we wanted to check out. It's called Qki haha 

We sat down ate a delicious apple pie with meringue on. That's the pie :)

And I came across a thought that maybe they need an assistant? Why not ask? So I did. So the guy told me that they actually do and to bring my CV the next day :) With a smile on my face I walked out and ran home to prepare a decent CV for this job. 
So as we were told we came back the next day, handed our CV to a nice lady in an apron and heard a question "Do you maybe have time to sit and talk about the job now?". Shocked we nodded our heads and took places. After the talk I seriously felt like screaming. I had a huge banana smile on my face and I thought OMG, is this really happening? Pixie was too hangover to share the joy, but she was pretty excited as well :)
Also, one important detail, we were asked to come the next day to BAKE something we do best. We were to come and prepare it there, so that they'd try and pretty much help around a bit, see how the things are done there and that kind of stuff. 
Of course, first thought: WHAT WILL I BAKE? Duuh, cupcakes. But which one? I though brownie, they are delicious. So I hurried home (AGAIN.) to try to do them at home once again, so that they I'd do them prefectly. But as I got home I spoke on the phone with one of my besties, Melanie. She said, "Hey, maybe you can do those peanut butter jelly cupcakes?". And there it was. I was like "OMG. You're totally right! They'll be perfect! I LOVE YOU!". So that's what I did.
And so yesterday I went there really and I mean REALLY panicked. My stomach hurt from nerves! But as I got there and started baking everything was all right. Then they tried it. And THEY LIKED IT, they really liked it! I was sooo proud, you cannot believe! This was an amazing feeling! Later people could actually BUY my cupcakes there. WOAH, that's BIG. 
They told us that they'll contact us after the weekend and we'll see what will come out of it. 
I really hope I'll get to help them there. I mean, just today, I was there just a couple of hours, but it was amazing to do my cupcakes, then to help with a cheesecake, meringue (actually the one to cover this pie I've ate there). And I've learned a bit :) I know this job would be like just a couple of hours in a week, but that's a good start. I'm on it! And.... I hope I'll get it!
Anyways, thanks for reading 'cause I believe that was just me excited about a job that I MIGHT get and you so didn't have to do that. I just wanted to share this with you. Thank you!
Oh, and here are the cupcakes, I had to take a photo and show you!


The whole place looks really cute. It is in pink,black and white colors and has some really cute "drawings" on the walls :)

Oreo Cupcakes episode 2

There, I finally got to post the pictures. Why did it take me so long? No idea. Maybe 'cause I sometimes feel like I'm just writing those posts for myself.

Oreo Cupcakes 1...2...3... GO!

Am I the worst blogger ever? Guess so. I could try to explain myself - like it's the end of the school year and I had a lot of work to do - but there's no point in doing that. That's not changing anything! So I can just say that I haven't been baking that much recently, as I didn't have time.
BUT now that summer's almost there I AM GOING BACK to baking all the time. Starting today! Today, my loves, I am baking Oreo Cupcakes! My older brother - Anthony is going back from college and I thought that I'd bake something for him as he couldn't eat my delicious cupcakes for like... half of a year? Poor thing!
Anyways, Melka some time ago tried this recipe and brought two cupcakes to school so that I could try them, and wow they were so awesome! So I thought that's what I'm going to bake :) So big pack of oreos laying right beside me, first part of cupcakes in the oven...

That's how it looks for now...



I bought those cute paper liners! Those colors are so in right now,.. hahahha
Anyways, I guess I'll do a post with pictures of them later and if you want I can also give you a recipe or even a step by step "photo relation".  Mmmm the smell's lovely.

Sweet side of my life

I'm sorry I haven't been posting lately, but these summer-like days make me go crazy and I just love the weather. It's still amazingly hot but I thought I cannot leave you like that!
So I just want to show you and tell you about some things I've been doing lately or what I find interesting of baking
First off look at this cake, isn't it JUST AMAZING? Unfortunately, it wasn't me who made it, it was ordered in a bakery, but look how cute that is. My bff Mads had her 18th birthday party and this is her great birthday cake!
Ahhh awesome :)

As an interesting detail I can say that I've baked brownie cupcakes for that party, because Mads loves them and as she told me she was looking forward to eating them again :)
The other delicious things on the picture are mango mousse filled tartelettes she did.


Second thing I'd like to tell you about is The Museums' Night in Warsaw. We went with Pixie to the Royal Castle and 2 more places, anyways, I HAVE TO show you this beautiful outfit of a girl in the castle. She was dresses as Marie Antoinette of course. 

Look at that! She had a cupcake and a couple of macaroons in her hair, big cupcake in her hand and sweets all over her dress! AAA! Loved it! I could wear I cupcake on my head... maybe I should get a headband like that... I have earrings with cupcakes (from Pixie btw) so that would start a collection!

I've also found there (in the Royal Castles collection) a really old (well, it's in museum, it's not hard to guess) but I don't know any more details about this... cup? sugar bowl? I'm not even sure what it was but I fell in love with this object. 


Isn't it adorable? All turquoise with this amazing flower on the top!
OH, last thing ahha this is kind of funny. I went to the store at our school to buy just any notebook, 'cause I needed one instantaneously, 'cause my last one ended. And miss took out the first one and I paid and ran to class. Only then I realized the notebook I was holding was WITH A CUTE LITTLE CUPCAKE. How funny is that! What a coincidence! There it is.


Okay, I really have to end this post. I have lots of homework.... damn, anyways, hope you enjoyed my showing you a little bit of what's been up with me and my bakingmania haha. Let me know if you want more posts like this or if you found it boring.

Chocolate and nutella cups!


I found a really awesome recipe for CHOCOLATE NUTELLA CUPS. How great does that sound? And it looks and tastes even better! Check this out!

I have done those! And I gotta tell you, guys, this is one of the sweetest things I've ever eaten. I'm a HUGE chocolate eater and I'm the person who can eat a whole bar of milk chocolate all by myself sooo that's a huge deal! Anyways, if you are craving for something sweet, having a rough day or sth it is perfect! + you can always do JUST ONE! I did like 3 (with one bar of chocolate I had at home). Anyways, really try them out! Oh, and if you want me to do a step by step of this recipe or ANY OTHER recipe I've posted or you're interasted in leave it in a comment below, I'll be glad to do it :)

Zucchini Cupcakes

It is really amazing to get the feedback from you guys! Even if it's not as a comment, but just as a private message it's... wow, I can't tell you how great that is! Makes me smile (banana smile - you know what i mean!)
Anyways, I have loads of pictures and loads of subjects for posts I could do so I think I should use them. Now that it's decided.... I'm on a diet. Again. You know, bikini season's coming up, you gotta look good! But don't you worry. I'm not going to stop baking. N E V E R!I actually baked brownie cupcakes just 2 days ago :>
But as the "diet" subject came up I thought about my diet cupcakes (I know that's kind of an oxymoronic expression :>) and I figured I have to find more recipes for healthy stuff like that. BUT for now, I figured out I still haven't posted the recipe for them!


DIET (zucchini)  CUPCAKES

from  "Cook Yourself Thin " show :)

Ingredients:


cupcakes:
  • 1 1/4 cup  flour
  • 1 1/2 tsp baking powder
  • pinch of salt
  • 2 eggs
  • 2 tsp of seeds from vanilla bean or you can simply add a bit of vanilla extract
  • 3/4 cup sugar
  • 1  3/4 cup  ZUCCHINI! peeled and grated! :) - that does the trick!
  • you can add 1/2 cup of ground almonds if you want 
frosting:
  • 3 egg whites
  • 1 cup of sugar
  • pinch of salt
  • vanilla extract
  • zest from 1/2 lemon

What to do?


  • Start with the frosting! So in a heatproof bowl combine egg whites, sugar, salt & extract





  • Set the bowl over a pan of simmering water and stir until it's warm and everything's melted (1-2 min)






  • Take the bowl from the pan and mix its contents until  it's glossy, cool AND STIFF  (when you put it over your head upside down nothing can fall out of it!) - it can take a good 5 minutes...






  •  Stir in gently the lemon zest and put in a fridge for about 30 minutes





  • Now let's proceed with the cupcakes!  Preheat oven to 180C. Combine flour, (almonds) and baking powder in one bowl





  • In another bowl whisk eggs with sugar and salt and vanilla until it is one-colored and combined






  • Beat the zucchini with a mixer on low speed a little bit






  • Mix zucchini, dry and "wet" ingredients together until corporated 






  • Fill in the paper liners and bake for about 20-25 minutes in an oven preheated to 180C (356F)






  •  Decorate the cooled cupcakes with frosting and  BON APPETIT! 




  • I want to stress that YOU CAN'T MAKE OUT ZUCCHINI in them while eating! They don't taste like it at all! Try them yourself and check that out! It is just a substitute for butter and they have half of the calories they would normally have.
    And that's how my cupcakes look today! I've decorated them with banana as I had it at home and thought it was pretty good idea :)

    Easter delights

    Hi! I am soo sorry for not posting this earlier I just couldn't find time for it, I don't even know why... I was about to do it like million times but then something always came up and there I am, 2 weeks after Easter showing you what I baked... forgive me, please!
    Soo of course, like everybody ( I guess) I've baked a lot with my mom, mostly. We did the traditional polish Easter bakings like mazurka, babka (something like a yeast cake), but we also made cheesecake and I've done cupcakes, obviously :) I think I've gained soo much weight, but let's not think about it! Look at that yummy things!


    this is mazurek, and it's pretty much a shortcrust pastry that you can put everything on. I did mine with caramel fudge sauce and chocolate over it :) Decorated with almond flakes and dried cranberries 

    this is babka and some easter eggs :) Mine had rasins inside and was truly delicious

    and there is one single cupcake with frosting lookin like brain and chocolate egg. Oh and they had chocolate egg inside of them as a surprise :> well, they turned out soo sweet that we had troubles eatin' them haha 
    I guess that's it for today, but I MADE MACAROONS, you guys! But about this next time,

    Spring love

    Well well well, look at me. It's 7.04, i have like 6 minutes to leave for school. And what am I doing? A post. But since I had those 10 minutes, I figured I can show you some amazing pictures of spring cupcakes. Of course I was inspired by the beauty of  the weather. Is it just me or world really gets much much prettier in the spring. But that not it, my loves. Spring only comes so that after it can be SUMMER. Oh, how I can't wait for those summer days! Anyways, back to the topic. I've found some great pictures I wanted to show you, guys :)

    Happy Easter!

    Hello, hello! I'm sorry, I haven't posted this earlier, but I was so taken with all the preparations I didn't find time to do it. Anyway, I've baked really good chocolate cupcakes with lemon cream cheese frosting for my "school Easter" and as I got so many requests to post a recipe for this frosting, I couldn't say NO. It's kind of problematic, though. I haven't used ANY recipe for this frosting. I just made my own, if you can call simply pouring some things together in a bowl a recipe. Anyways, the problem is, I am not sure how much of e.g. confectioner's sugar did i put in. But about this in a second. YOU WANT IT, YOU GOT IT. 

    LEMON CREAM CHEESE FROSTING

    Ingredients:

    • 1 package of cream cheese (125g) - I used "ostrowia jogurtowa" if you were wondering, 'cause I didn't have Philadelphia at home
    • 20-25g of butter at room temperature (sth about that, I just put a little bit)
    • juice from half of lemon 
    • confectioner's sugar - but how much, that is the question. I don't know, I just poured some, mixed it, poured some more and kept doing that until I got the consistency I liked. I didn't want want it to be too runny, but well, it just kept on being rather runny, so I let it be like that finally, as I COULDN'T WIN. I believe it could've been about 2 cups? I don't know, really, you just have to check if you like it like that.

    What to do?

    What you do is simply mix in stand or handmixer all those ingredients and try with confectioner's sugar. 
    When you're done put it in fridge for about an hour, decorate the cupcakes and put them inside of the frigde again. That's at least how I did it, without putting it in fridge at all, it can just run down your cupcake, which is, I BELIEVE, not good. 

    I decorated my cupcakes with orange zest and that's how it looked :)

     

    Oh, I've also done one St. Patrick's Day a little bit later :D

    BASIC : Vanilla Cupcakes

    Hi, there! Like I said, I'm back in my baking shape, so as I've done vanilla cupcakes w/ chocolate frosting I thought I'd share this really basic recipe for pretty much "plain" cupcakes :) My favourite is from joyofbaking.com , ah thanks Stephanie Jaworski! You ALWAYS have those ingredients at home and whenever you feel like baking OR EATING cupcakes it's just great to have that tested recipe. Oh, there's an idea, I could do a series of just those super easy, BASIC, recipes, what you think about that?
    Anyways, today vanilla cupcakes are on!  Soo there you go!




      VANILLA CUPCAKES  


    Ingredients:


    1/2 cup (113 grams) unsalted butter, room temperature
    2/3 cup (130 grams) granulated white sugar
    3 large eggs
    1 teaspoon pure vanilla extract
    Zest of 1 large lemon (outer yellow skin)
    1 1/2 cups (195 grams) all purpose flour
    1 1/2 teaspoons baking powder
    1/4 teaspoon salt
    1/4 cup (60 ml) milk
    ( of course, you CAN skip lemon zest, but well, it's better with it!)



    What to do?


    1) Preheat oven to 350 degrees F (177 degrees C) and line 12 muffin cups with paper liners.
    2) In the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy
    3) Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract!
    4) In a separate bowl whisk together the lemon zest, flour, baking powder, and salt.
    5) With the mixer on low speed, alternately add the flour mixture and milk, in three additions, beginning and ending with the flour. Scrape down the sides of the bowl as needed.
    6) Evenly fill the muffin cups with the batter
    7) Bake for 17-20 minutes, let it cool for a moment and ENJOY!





    haha I've baked those a couple of times, and they are delicious every time, really! And here you've got the pictures from the last time :>

    Peanut butter & jelly cupcakes!

    Ahh, do you know how amazing it is to bake twice a week again? Feels like I'm living again! So let me tell you about those cupcakes.
    So friday - my classes were cut short and my and one of my best friends figured that we could bake something.  And we did, amazing peanut butter cupcakes with peanut butter and frosting and jelly haha loads of peanut butter, huh? I hadn't done them before, 'cause well.. I'm a huge peanut butter fan and I had been thinking about peanut butter cupcakes as a waste of such a goodie (you do put like a half of a jar!). But Maya talked me into trying it and I gotta tell you, it's amazing! It wasn't a waste after all :) Their fascinating salty-sweet taste is something you HAVE TO try! I mean it, if you were scared, just like me, to try them, DO IT!
    We've used a really good recipe from foodmess.com :)It's in polish, so I believe I'll translate for y'all!



     PEANUT BUTTER & JELLY CUPCAKES 

    Ingredients 

    (makes about 18 bigger cupcakes):

    cupcake dough:
    1 3/4 cup of all-purpose flour
    1 tsp baking powder
    1/2 tsp salt
    170g unsalted butter at room temperature
    1/2 cup granulated sugar
    75g = 2/3 cup peanut butter
    3 eggs
    1/2 cup half and half cream (12-18%)
    1/2 tsp vanilla extract

    frosting:170g cream cheese (e.g. Philadelphia)
    1/4 cup granulated sugar
    1/2 tsp salt
    1 cup peanut butter
    1/2 tsp vanilla extract

    + JELLY - we used my favourite - rasberry

    What to do?

    1) Preheat the oven to 180'C (355'F) and line cupcake pan with paper liners
    2) In a smaller bowl sift together dry ingredients (flour, baking powder and salt).
    3) In a bigger bowl combine butter and sugar until nice and fluffy, add peanut butter and mix thoroughly
    4) Add eggs, one at a time and mix after each one
    5) Add cream and vanilla extract and mix it all until just incorporated
    6) Add dry ingerdients in three additions, stiring after each one
    7) Fill the cupcake liners about two-thirds full
    8) Bake for about 20 minutes or until they are gettin' a nice golden color
    9) Leave it to cool and prepare the frosting!
    1)Combine cream chees and sugar
    2) Add peanut butter, salt, vanilla extract and mix it well (if it's too thick you can add a tiny bit of milk!) 

    Put the frosting over cooled cupcakes and decorate it with jelly!
    I actually before putting the frosting on, cut wholes in cupcakes and put a little bit of jelly inside of the cupcake, 'cause I liked the cupcakes with more distinct taste of jelly, but if you do not then it's alright to skip it and just enjoy it like it is! 






    I think they look adorable and they taste even better! Mmmm amazing! Now you have to try it, no other option.
    Guys, I'm loving all the feedback and when you tell me that you've baked "my" cinnamon rolls it just... it's just amazing, so thank youuu! And keep going, baking and getting pleasure from it just like I do :)

    CINNAMON ROLLS

    Hello, I know I was to do this post like 2 days ago, but I was soo tired and I tweeted that I'm really sorry, but school fagged me out. Ugh.. To the point! I baked the cinnamon rolls, though and I wanted to show you a few stages of baking them, share the recipe and a few tips of my own!
    So as I said before, the recipe's by Laura Vitale and you can find on her site. There's also a VIDEO of her preparing this, which, I think, is really helpful ;)

    here's the recipe



      CINNAMON ROLLS  


    Makes 14 to 16 Rolls ( I actually did those 16 + baked the ends, that she simply cuts off! They were cute, like small versions of those "big" ones! )

    Ingredients:

    Rolls:
    • 1 Package of Dry Yeast
    • ¾ cup of Whole Milk (she emphasizes that it's this 3,2% milk and I did buy and bake with it, so I haven't tried to go around and use my normal skim milk)
    • ¼ cup of Granulated Sugar
    • ¼ cup of Water, warmed up to 115 degrees (it's simply warm water, don't worry about how warm you water actually is. That's what I did, at least)
    • ¼ tsp of Vanilla Extract
    • 1 Egg
    • 1 tsp of Salt
    • ¼ cup of Unsalted Butter, melted (1/4 cup is about 55g)
    • 4 cups of All Purpose Flour
    • ¼ cup of Melted Butter, to brush over the top before baking (don't melt 1/2 cup at once! Because you'll brush over the cinnamon rolls after something like 3h, so butter won't be melted anymore! Unfortunatelly, you have to melt it two times. And remember to leave the rest of butter outside the fridge . According to the recipe you'll need in total 5/6 cup of butter = about 188g, but I didn't need 1/4 cup = 55g to brush over the rolls, I just put a bit, maybe like 20g and it was just enough!)
    Filling: 

    • 1/3 cup of Unsalted Butter, at room temperature (about 75g, but I used less)
    • ¼ cup of Granulated Sugar
    • 1 1/2 Tbsp of Ground Cinnamon (you can add of course a but more, if you love cinnamon just like me :) I think i added about 2 tbsp)

    What to do?

    1) In a small bowl, combine the warm water and 1 tsp of the granulated sugar, sprinkle the yeast over the top and let it sit for about 5 minutes (until it starts to foam up!)

    2) In the bowl of a standing mixer fitted with a dough hook (it's great if you have a GOOD mixer with the dough hook - like KitchenAid aaaaah I want it! :< - but the weaker mixers are not doing well with the yeast dough... So what I did is mix it together just a little - because then it just starts to get into my mixer... don't ask - and threw the dough and not incorporated flour out on the table and just pinched the dough with my hands. It wasn't hard to do it, maybe it wasn't as smooth as "a baby's bum" as Laura calls it, but it wasn't a problem), mix the egg, milk, salt, sugar and melted butter. Add 2 cups of the flour and the water, vanilla and yeast mixture, mix until its all incorporated and slowly add about 2 more cups of flour. Turn the speed up to medium and let it mix for about 5 to 7 minutes or until you have a smooth dough.

    3) Oil a large bowl with some vegetable oil and set aside. Take the dough out of the mixer and pull it together with your hands to form a ball. Place it in the oiled bowl and oil the top of the dough with a little vegetable oil. Cover with plastic wrap and place it in a warm spot to rise for about 2 hours.

    4) In a small bow, mix together the brown sugar, granulated sugar and cinnamon for the filling, set aside.

    5) When doubled in size, punch the dough down and roll it out onto a floured surface into a 15x9” rectangle. (take out your baking pan and roll out the dough to be as big as it is) Spread the soft butter over the top and sprinkle evenly over the sugar and cinnamon mixture. Cut into 14 to 16 slices (make sure they are even) and place them cut side down in a well buttered 9x13 baking pan . Cover with plastic wrap and let put them back into a warm spot to rise for another 1 ½ hours.(I put the cut rolls in two baking pans and they were much prettier more ROUND, because they had more space. Actually what I did is I put one baking pan with 8 rolls in a warm place for 2h and second in a frigde to rise during the night. What I found out the next morning when I baked the rolls is that those from the fridge where better than the ones I ate in the evening, more fluffy :) So if you want to have fresh rolls in the morning- because they are the best just after taking out from the oven - put covered in plastic wrap baking pan with unbaked rolls to the fridge for the night - they will rise slowlier there but they will rise :))

    it doesn't have to be pretty and perfect!

    6) Meanwhile preheat your oven to 350 degrees. (about 175 degrees of celsius)

    7) Once risen, brush them with some melted butter and bake them for about 30 or until golden brown. (Mine were in the oven for about 20 and were just perfect! So be careful, 30 in my oven would burn my beauties!)
    8) While the cinnamon rolls cool for a few minutes make the glaze. Mix all the ingredients of the glaze in a bowl except for the milk, once the cream cheese is all mixed, slowly add the milk until you get a runny glaze consistency. Immediately pour the glaze over the cinnamon rolls and enjoy!
