BASIC : Vanilla Cupcakes

Hi, there! Like I said, I'm back in my baking shape, so as I've done vanilla cupcakes w/ chocolate frosting I thought I'd share this really basic recipe for pretty much "plain" cupcakes :) My favourite is from , ah thanks Stephanie Jaworski! You ALWAYS have those ingredients at home and whenever you feel like baking OR EATING cupcakes it's just great to have that tested recipe. Oh, there's an idea, I could do a series of just those super easy, BASIC, recipes, what you think about that?
Anyways, today vanilla cupcakes are on!  Soo there you go!



1/2 cup (113 grams) unsalted butter, room temperature
2/3 cup (130 grams) granulated white sugar
3 large eggs
1 teaspoon pure vanilla extract
Zest of 1 large lemon (outer yellow skin)
1 1/2 cups (195 grams) all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup (60 ml) milk
( of course, you CAN skip lemon zest, but well, it's better with it!)

What to do?

1) Preheat oven to 350 degrees F (177 degrees C) and line 12 muffin cups with paper liners.
2) In the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy
3) Add the eggs, one at a time, beating well after each addition. Beat in the vanilla extract!
4) In a separate bowl whisk together the lemon zest, flour, baking powder, and salt.
5) With the mixer on low speed, alternately add the flour mixture and milk, in three additions, beginning and ending with the flour. Scrape down the sides of the bowl as needed.
6) Evenly fill the muffin cups with the batter
7) Bake for 17-20 minutes, let it cool for a moment and ENJOY!
